I’m starting a TAFE course this year (hopefully) about interpreting. Not sure about the job prospects after graduation though; do a search of local job hunting sights for “interpreter” and you don’t find much.

Doing some more in depth searching led me to find these sites. They seem to be job boards for translating jobs. Hopefully this list can be helpful to those looking for something similar!
